You have to visit the dolphins, a little pricey, but fun none the less. There's also a waterpark there as well as Nassimi beach and other night activities.

Duh, it's Atlantis. Get a massage at their Spa and you can also get access to their amazing pool system. Most hotels in Dubai do not grant you pool access with Spa packages so this is a great deal!
